Let’s face it. Until something changes, it’s only going to get more and more challenging to make time to eat right. One would think my mom already saved this crooked world once by giving birth to me, but just when you think there’s no more work to be done, Momma K strikes again, and has come to the rescue of all of us by teaching me how to make one of the best meals I’ve ever had. Now I’m going to teach you. When I saw how simple it was, I thought it was a joke. Maybe she was just teaching me the simpleton version because I’m “special.” But I just made it for myself, and it came out just as epic. I assure you, it’s simple. Not only that, it’s just as good when you heat it up the following day!
Time is your most valuable commodity. It’s becoming increasingly difficult to eat natural, minimally processed meals, whether it’s due to lack of resources, having more responsibilities, getting older and having less energy, or just being lazy and undisciplined. I know all too well about not having enough time or resources to eat right or eat enough. Not only that, according to Nutrition and metabolism Research, “Ultra-processed foods comprised 57.9% of energy intake, and contributed 89.7% of the energy intake from added sugars. The content of added sugars in ultra-processed foods (21.1% of calories) was eightfold higher than in processed foods (2.4%) and fivefold higher than in unprocessed or minimally processed foods and processed culinary ingredients grouped together (3.7%).”
